How to Make Jamaican Style Rice and Peas

Peas are known to be a plant protein source and when paired with Jamaican-style rice it is highly appetizing and nutritious. Peas and rice are served in many households as a Sunday dinner with fried chicken or Jerk. Rice and peas is one of the many favorite dishes of the people of the Island of Jamaica, I will give you the recipe and the outline of how to put it all together to make this dish.

Prescription.

  • 2 cups parboiled rice or brown rice
  • 3 sprigs thyme
  • 2 cloves of garlic
  • 2-stem sellion (green onion
  • 1 tablespoon of sea salt
  • 1/2 tablespoon cayenne pepper
  • 1 can of pigeon peas with coconut milk
  • 4 cups water (use correct amount in pot or rice cooker)
  • 1 Scotch Bonnet pepper

Process

Pour the four cups of water into a saucepan or rice cooker.

Combine the water with the can of pigeon peas with coconut milk.

Pour in the rice and stir well so that it is completely covered.

Add the salt, pepper, thyme, garlic and skellion (green onion) and stir well.

Place the scotch bonnet pepper in the pot / rice cooker.

Turn on the rice cooker / Turn on the stove under the cooker.

Let cook for approximately forty-five minutes or until done.

If you use the stove, cook over low heat and keep a close eye on it.

When the rice is done, turn off the stove.

This rice when ready, can be served with any other meat that has been prepared along with vegetables. Making Jamaican style rice and peas is very easy to do, it will be necessary to make sure that you cook over low heat, if it is not going to burn, you want to avoid that. This is especially critical when done on the stove, not of great concern when using a rice cooker.
