Amazing sweet and sour brisket

Growing up on the barbecue, there were times when you just couldn’t find a good place to eat the brisket. In fact, increasingly, it cannot be found anywhere. That’s when I started doing it at home. The only problem was, I didn’t always like to light up the smoker. One day a good friend told me about a brisket that he makes in his oven and how amazing it was. I asked him what his secret was and he told me that it was the bittersweet that made it so good.

Here is the recipe that turned me around. The secret ingredient is cola. It has just the right amount of fizz to help break down fatty tissue and make this breast melt in your mouth.

Prescription:

1 medium onion, peeled and quartered

3 large garlic cloves

1/4 cup Dijon mustard

1/4 cup Italian dressing

1 1/2 cups of Cola

2 cups BBQ sauce (1 cup reserved)

1/4 cup honey

1/4 cup cider vinegar

1/4 cup soy sauce

1 tablespoon of black pepper and kosher salt

1 (6 to 7 pounds) first cut breast, rinsed and dried.

Heat the oven to 350F. Cover the breast with all the ingredients and let it rest for 1 hour. Place in the oven and cook for 4 hours, turning every hour. Once cooked, the meat should be fork tender. Remove the juices from the pan and place in a saucepan. Add 1 cup of BBQ sauce to the saucepan and simmer for 10 minutes. For overcooked breast sauce.
